Ingredients
Vegan Tartare
- 4 medium beetroots, cooked
- 1 small red onion, finely chopped
- 2 tbsp capers, finely chopped
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1 tsp balsamic vinegar
- Salt and pepper to taste
- Fresh parsley, for garnish
- Vegan cream cheese and crackers, for serving
Instructions
- Place the diced cooked beetroots in a mixing bowl. Add chopped red onion, mustard, olive oil, lemon juice, and balsamic vinegar.
- Season with salt and pepper to taste, then gently mix with a spoon until everything is well combined.
- Use a ring mold on a serving plate to create a classic tartare shape.
- Spoon the beetroot mixture into the mold, pressing it gently down.
- Carefully remove the mold to leave a neatly stacked tartare. Repeat with the remaining mixture.
- Drizzle tartare with olive oil and garnish with fresh parsley.
- Serve with a dollop of vegan cream cheese and toasted bread or crackers. Enjoy!
